Mississippi Chicken (Made with Hello Ranch)

There’s a reason Mississippi Pot Roast has become such a modern classic. It’s rich, buttery, tangy, impossibly tender, and somehow manages to be both comforting and incredibly easy to make. When you find a recipe that perfectly bridges comfort and ease - you have our fullest attention okay? Okay.

This Mississippi Chicken is inspired by that same beloved recipe, swapping the traditional chuck roast for chicken to create a slightly lighter version that’s just as flavorful. Instead of using a packet of ranch seasoning, we’re using our Hello Ranch Superfood Dressing Mix, which brings all of those familiar ranch flavors along with real herbs, spices, and nourishing ingredients you can actually recognize.

Whether you’re meal prepping for the week or looking for an effortless slow cooker dinner, this recipe is about as hands-off as it gets. Just add everything to the crockpot, let it cook low and slow, then shred the chicken into a buttery, tangy sauce that’s perfect spooned over mashed potatoes, rice, egg noodles, roasted vegetables, or tucked into sandwiches.

What Is Mississippi Chicken?

Mississippi Chicken is a variation of the famous Mississippi Pot Roast, a recipe that became wildly popular thanks to its simple combination of meat, ranch seasoning, au jus seasoning, butter, and pepperoncini peppers.

Using chicken instead of beef creates a meal that’s a little lighter while still delivering that signature savory, buttery flavor people love. The chicken becomes incredibly tender as it cooks and easily shreds into the flavorful cooking juices.

Our version skips the store-bought ranch packet in favor of Hello Ranch Superfood Dressing Mix, giving the dish homemade ranch flavor with ingredients you’ll actually feel good about serving.

Why We Use Hello, Ranch for our Crock Pot Mississippi Chicken Recipe

Traditional ranch seasoning packets are undeniably convenient, but they’re often made with preservatives, artificial flavors, anti-caking agents, and ingredients that many home cooks wouldn’t normally choose to keep in their kitchens if they could avoid it.

Hello, Ranch was created to bring all of that classic ranch flavor using thoughtfully selected herbs, spices, cultured dairy, and superfood ingredients - without asking you to sacrifice convenience or your good health.

Because our mix is designed to do far more than make salad dressing, it’s equally at home seasoning chicken, vegetables, roasted potatoes, dips, marinades, and slow cooker meals like this one. It’s one simple pantry staple that works far beyond the salad bowl. She punches way above her weight, one might say.

Frequently Asked Questions

Can I use chicken thighs instead of breasts?

Absolutely. Chicken thighs stay exceptionally juicy in the slow cooker and shred beautifully.

Is Mississippi Chicken spicy?

Not really. Pepperoncini peppers are mild and tangy rather than hot. They add brightness and balance to the richness of the butter.

Can I freeze leftovers?

Yes. Store cooled Mississippi Chicken in an airtight container for up to 3 months. Thaw overnight in the refrigerator before reheating.

Can I make this in the Instant Pot?

Yes. Cook on High Pressure for about 12 minutes (depending on the thickness of your chicken), allow a 10-minute natural release, then shred the chicken into the cooking juices.

  • 1 packet of Hello, Ranch Superfood Dressing Mix
  • 1 packet of au jus seasoning (sold in packets like our dressing mixes)
  • 4 tablespoons butter
  • 1 cup sliced pepperoncini pepper rings, drained (banana peppers)

How to Make Mississippi Chicken

1. Place the chicken in the bottom of your slow cooker.

2. Sprinkle the Hello, Ranch mix evenly over the chicken, followed by the au jus seasoning.

3. Scatter the butter in pieces over the top and arrange the pepperoncini peppers around the chicken. Add a couple tablespoons of the pepperoncini juice from the jar if you’d like a little extra tang and moisture.

4. Cover and cook on Low for 6 to 8 hours or on High for 3–4 hours, until the chicken easily shreds with two forks.

5. Shred the chicken directly in the slow cooker and stir everything together so the meat absorbs all of the flavorful juices before serving.
